Rainbow Dinner Salad

This salad is the perfect side dish for any meal. It’s refreshing zesty flavor will please even the pickiest of eaters. Add chicken, steak or shrimp and make it an all-in-one healthy meal.

Ingredients

  • 1⁄2 head red cabbage, use Cone #5
  • 1⁄2 head green cabbage, use Cone #4
  • 1 large zucchini, use Cone #2
  • 1 medium squash, use Cone #2
  • 1 apple, use cone #2
  • 3 radishes, use Cone #2
  • 1 celery stalk, use Cone #2
  • 1 large carrot, use Cone #1
  • 1 lemon, use Cone #1 to zest and juice

Directions

  • Use Cone #5 to process the red cabbage.
  • Use Cone #4 to process the green cabbage.
  • Use Cone #2 to process the zucchini, squash, apple, and celery. Place radishes in the hopper and process.
  • Use Cone #1 to process the carrot, zest the lemon and juice the lemon.
  • Toss all ingredients together and serve. Enjoy!
