When writing to his wife about the Declaration of Independence, John Adams knew it was a special event. However, he got two things wrong. First, the date itself! He believed that July 2nd would “be the most memorable epoch in the history of America.” July 2nd was the day when the Second Continental Congress voted to approve the resolution of independence—while July 4th was when the document was finally approved. Second, he believed this event would be celebrated with “solemn acts of devotion.”

Two hundred forty-three years later, Independence Day is anything but a solemn event. Americans celebrate the 4th of July, loud and proud, with booming fireworks; crackling sparklers; outdoor activities; everything decorated red, white, and blue; and of course, savory grilled foods. It’s a day for family and friends, but it’s also a day when our restrained eating habits get tossed to the front lawn.
