Steak:
12 Ounces
sirloin steak (340 g)

red onion, strung, use Cone #2

red bell pepper, seeded and julienned

mushrooms, sliced, use Cone #4
Sauce:

cream or half-and-half (180 mL)
½ Cup
beef broth (120 mL)

salt and pepper, to taste
Potatoes:

Take steaks out of refrigerator at least 30 minutes prior to cooking.

Place onions, red peppers and mushrooms in small bowl.

Preheat 12" skillet over medium heat. When several drops of water sprinkled in skillet skitter and dissipate, add steak. Cook depending on desired doneness. Raw: 1 - 2 minutes each side; Medium: 3 minutes each side; Well done: 1 minute each side, then lower heat and cook 4 minutes each side.

When cooked, remove meat from skillet and let cool for about 10 minutes.

Add onions, bell peppers and mushrooms to skillet and sauté until tender-crisp.

Preheat 10" skillet over medium heat. When several drops of water sprinkled in skillet skitter and dissipate, add mushrooms and sauté until evenly browned, stirring occasionally.

Add garlic and sauté approximately 2 more minutes.

Add cream and broth and reduce heat to low. Let cook until thickened, stirring occasionally. Season with salt and pepper, to taste.
Tips

  • Substitute fish stock for vegetable or chicken stock.
  • Serve fish stew with hearty grain bread and butter, if desired.
  • Substitute chives and fresh parsley for other fresh herbs, such as thyme, basil or cilantro.
  • Add in 1 - 2 cups of cream at the end of cooking for a very rich stew.
