Saladmaster Three Onion Soup

 

Utensils

7-quart Dutch oven, Saladmaster Machine

Ingredients

1 tbsp Minced fresh garlic)
All-purpose seasoning to taste
1 Bay leaf
2 lbs. Onions (of at least three different types) sliced #4 cone (about 7 cups)
2 tbsp Tomato paste
Salt
2 tbsp Flour
2 quartsLow salt/fat beef broth. (HEATED)

 

Directions

  1. In the 4qt. (4 litre) Skillet or MP5, over medium heat. Add the onions, garlic, bay leave and all-purpose seasoning, stirring occasionally, for 10 to 15 minutes, with the lid cracked until the onions are a rich golden brown. (This is caused by the sugar in the onions caramelizing). Add tomato paste and cook for 2-3 more minutes.

  2. Sprinkle the flour over the onions and cook, stirring, for 2 or 3 minutes. Remove the pan from the heat. If you are using your MP5, turn the heat down slightly to prevent sticking.

  3. Stir the heated beef broth into the onions.

  4. Return the soup to the burner or temperature in the MP5. Cover with lid. When the vapo-valve begins to chatter, turn to low and continue to cook for 15-20 minutes or until onions are tender.

  5. Taste for seasoning, and serve with cheese croutons.

Tip: You can serve this soup in individual terrines baked in the oven with the cheese croutons.
